Season the fat side of each of the racks with sea salt and ground black pepper to taste.
Heat the oil in a large heavy-based frying pan over high heat. When smoking, place two of the lamb racks in the pan, skin side down, and cook for 2 minutes. Remove and cook the other two racks. Sit the racks on a chopping board, skin side up, and allow to cool to room temperature.
Preheat the oven to 180°C (350°F/Gas 4).
Place the butter, mustard, breadcrumbs, garlic and herbs in a bowl and use your hands to mix together. Smear the mixture all over the browned side of the lamb racks. Place, crust side up, in a roasting pan and bake for 20 minutes or until the crust is golden.
